Our Cheeses
We produce both Cow's Milk and Goat's Milk cheeses. Our Cheese is made of raw, unpasteurized milk and aged for 61 days.
Both have a mild and pleasant taste after this initial aging. The goat's milk cheese is reminiscent in flavor and texture of Havarti; the cow's milk cheese is more akin to a farmhouse Muenster.
Our cheese will continue to age slowly in your refrigerator if the package is left unopened, becoming more distinct and robust over time, and even attaining some of the sharpness associated with farmstead cheddars.
Use our cheeses crumbled on salad, grilled in a sandwich, melted in or on a hamburger, sliced on crackers, cubed on a fruit tray, in a quiche, or wherever cheese enhances a dish.
The soft texture makes them even spreadable when used at room temperature.
